Purely healthy baby spinach: Take two cups of organic spinach and wash carefully. Remove stems. Steam spinach for about four to five minutes. Leaves should be wilted. Press out any excess water and puree in blender. Makes about two servings. You can pour puree into ice cube trays and freeze. Later pop the cubes out and place in freezer containers. Sweet carrots: Steam one organic carrot and about half an organic red apple until very soft (until easy to mash). The apple will be done sooner so take it out as the carrot finishes steaming. Add both to blender with a dash of cinnamon and nutmeg. Puree. Freeze. Fresh green peas and potatoes: Steam 1 1/2 cup fresh or fresh frozen organic peas and in another small pot boil one small peeled organic potato. The potato will take much longer so start with that. Add both with the tiniest pinch of ground ginger to blender. Puree. Freeze. These mixes keep well for at least a month in the freezer -- any longer and they seem to get less fresh tasting. You can defrost a cube or two in the fridge and serve cold for teething babies or heat in the microwave or pot for a warm meal.
