Pumpkin chocolate chip muffins

Makes 24 muffins

Ingredients:

  • 2-1/2 cups Gluten Free Pantry Muffin and Scone Mix
  • 1/2 cup softened butter or margarine
  • 2 eggs, plus 4 egg whites, lightly beaten
  • 1 teaspoon cinnamon
  • 2 cups pumpkin puree
  • 1/2 cup chocolate chips or raisins

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized bowl, beat the butter until fluffy.
  3. Add the egg mixture to the butter and beat to combine.
  4. Toss the muffin mix with cinnamon and add it to the butter mixture.
  5. Fold in the pumpkin and mix everything to combine. Fold in the chocolate chips or raisins.
  6. Spoon the batter 3/4 of the way to the top of regular-sized, prepared muffin tins and bake for 20 minutes.
  7. Remove from the oven and allow to cool before serving.
