Tonight’s Dinner: Steak fajitas

A grilled steak is delicious on its own. But slice it up and add some guacamole and salsa and you have homemade steak fajitas that are out of this world.

There’s a great little ranch in California called the Harris Ranch. It’s right along the 5 Freeway and has some of the best steak around. As a matter of fact, whenever we drive up to Northern California from Los Angeles, we always stop just so we can pick up a few steaks to take home and grill up any way we want. So this last trip, we did what we always do and bought a few New York strips. The only thing I changed was how I prepared them. Instead of marinating them and grilling them up, I decided to spice things up a bit and make steak fajitas. And they were so darn good. Something about making the steak fajitas myself just made them that much tastier. So if you’re a fajita lover, give it a try. You won’t believe how easy it is.

Steak fajitas

Ingredients:

  • 1 tablespoon cumin
  • 1 teaspoon coriander
  • 2 tablespoons paprika
  • 2 tablespoons garlic powder
  • Salt and pepper to taste
  • 3 New York strip steaks
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1 (12 ounce) container guacamole
  • 1 (12 ounce) container fresh salsa
  • 12 flour tortillas

Directions:

  1. Preheat the grill to 500 degrees F.
  2. In a medium bowl mix together the cumin, coriander, paprika, garlic powder, salt and pepper. Rub it all over the steaks. Grill the steaks for about seven to 10 minutes per side for medium rare. Transfer steaks to a plate and let rest for five minutes. Slice and set aside.
  3. While the steaks cook, melt the butter in a large skillet over medium-high heat. Add the onions and cook for five to seven minutes or until onions begin to caramelize.
  4. To serve: Spread two tablespoons guacamole, one tablespoon salsa, one spoonful of onions and three to four slices of steak on the tortilla. Roll up the tortilla and enjoy.
